Ingredients
- 1.5 lb chicken breast
- 3 medium zucchini
- 1 large red bell pepper
- 1 large green bell pepper
- 2 medium carrot
- 3 tbsp olive oil
- 2 cloves garlic
- ¼ cup fresh parsley

Spiralize the 3 zucchini into noodles and set aside. Slice the 2 bell peppers and 2 carrots into thin strips, and mince the 2 garlic cloves.

Cut the 1.5 lb chicken breast into bite-sized strips and season with salt and pepper. Heat 2 tbsp of the olive oil in a large skillet over medium-high heat.

Add the chicken in a single layer and cook until golden and cooked through, about 6-8 minutes, turning occasionally. Transfer to a plate and set aside.

In the same skillet, add the remaining 1 tbsp olive oil, the sliced peppers, carrots, and minced garlic. Sauté over medium heat until tender-crisp, about 5-7 minutes.

Add the zucchini noodles and cooked chicken back to the skillet. Toss everything together and cook for 2-3 minutes, just until the zucchini is warmed through but still slightly crisp.
