Ingredients
- 2 large boneless, skinless chicken breasts
- 2 medium onions
- 2 tbsp olive oil
- 1 tbsp butter
- 2 tbsp fresh parsley
- 1 to taste salt and pepper

Slice the 2 onions thinly. Heat 2 tbsp olive oil and 1 tbsp butter in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until soft and golden brown, about 10 minutes.

While onions cook, season the 2 chicken breasts with salt and pepper. Push onions to one side of the skillet, place chicken in the center, and cook until browned on both sides, about 3 minutes per side.

Reduce heat to low, cover the skillet, and cook until chicken is cooked through (no pink inside), about 5-7 minutes. Stir onions occasionally to prevent burning.

Stir the 2 tbsp chopped parsley into the onions. Serve the chicken topped with the caramelized onion mixture and any pan juices.
