Ingredients

  • 200 g soba noodles
  • 250 g chicken thigh
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 4 cups dashi stock
  • 2 leaves shiso leaf
  • 1 tsp red chili flakes
  • 1 tbsp vegetable oil
  • 1 tsp salt
  • 1 cup water

Instructions

    Cook soba noodles in boiling water until tender, then drain and rinse under cold water.

    Season chicken thighs with salt and pan-sear in oil until golden and cooked through.

    Slice chicken into bite-sized pieces and set aside.

    Combine dashi, soy sauce, mirin, and water in a pot and bring to a simmer.

    Divide noodles into bowls, pour hot broth over them, and top with chicken slices.
