Ingredients
- 1.25 lb boneless chicken thighs
- 1 can (14.5 oz) canned crushed tomatoes
- 1 medium red onion
- 1 large cucumber
- 1 whole lemon (juiced + zested)
- 1.5 tsp oregano, dried

Pat chicken thighs dry. Season both sides generously with salt and pepper.
