Ingredients

  • 1.25 lb boneless chicken thighs
  • 1 can (14.5 oz) canned crushed tomatoes
  • 1 medium red onion
  • 1 large cucumber
  • 1 whole lemon (juiced + zested)
  • 1.5 tsp oregano, dried

Instructions

    Pat chicken thighs dry. Season both sides generously with salt and pepper.

    Heat 2 tbsp olive oil in a large skillet over medium-high until it shimmers.

    Sear chicken 2 minutes per side without moving. Don't worry if it's not cooked through.

    Pour in crushed tomatoes, half the red onion (thinly sliced), oregano, and lemon juice. Stir once.

    Simmer uncovered for 10 minutes, until chicken is tender and sauce thickens slightly.

    Dice cucumber and remaining red onion. Toss with lemon zest, 1 tbsp olive oil, and salt. Serve alongside chicken.
