Chicken Croquettes with French Fries and Tartar Sauce

Ingredients
- 2 cups chicken breast, cooked and shredded
- 4 medium potatoes, peeled and cut into fries
- ½ cup mayonnaise
- 2 tbsp dill pickles, finely chopped
- 1 whole lemon
- 1 cup breadcrumbs
- 1 large egg
- ½ cup vegetable oil

Mix the 2 cups shredded chicken with 1 beaten egg and 0.5 cup breadcrumbs until well combined. Season with salt and pepper.

Shape the mixture into 8 oval croquettes, about 3 inches long. Place them on a plate and chill in the fridge for 10 minutes.

Heat 0.5 cup vegetable oil in a large skillet over medium-high heat. Fry the croquettes in batches, turning occasionally, until golden brown and heated through, about 5-7 minutes per batch.

While the croquettes cook, heat 2 inches of oil in a deep pot to 350°F. Fry the 4 medium potatoes in batches until golden and crisp, about 5-6 minutes. Drain on paper towels and season with salt.

In a small bowl, stir together 0.5 cup mayonnaise, 2 tbsp chopped pickles, and the juice of half the lemon. Season with salt and pepper to make the tartar sauce.

Serve the croquettes and fries with the tartar sauce on the side, garnished with lemon wedges and a sprig of rosemary if you like.
