Ingredients
- 1.5 lb chicken thighs
- 1 lb potatoes
- 2 cups tomato sauce
- 1 medium onion
- 3 cloves garlic
- 2 tbsp olive oil
- 1 tsp ground cumin
- ¼ cup cilantro

Season the 1.5 lb chicken thighs with salt and pepper. Heat 2 tbsp olive oil in a large skillet over medium-high heat until shimmering.

Add the chicken skin-side down and cook until golden brown, about 5-6 minutes per side. Transfer to a plate and set aside.

In the same skillet, add the 1 sliced onion and 3 minced garlic cloves. Cook over medium heat until soft and fragrant, about 3-4 minutes.

Stir in the 2 cups tomato sauce, 1 tsp ground cumin, and 1 cup water. Bring to a simmer, scraping up any browned bits from the bottom.

Add the 1 lb cubed potatoes and return the chicken to the skillet. Cover and simmer over medium-low heat until potatoes are tender and chicken is cooked through, about 20-25 minutes.
