Ingredients
- ¼ cup chia seeds
- 1 cup milk (or yogurt)
- 1 tbsp honey or maple syrup
- ½ tsp vanilla extract
- ½ cup mango, diced
- ¼ cup granola
- ¼ cup berries (raspberries or pomegranate seeds)
Instructions
- 1
In a bowl or jar, whisk together the 1/4 cup chia seeds, 1 cup milk, 1 tbsp honey, and 1/2 tsp vanilla extract until well combined.
- 2
Let the mixture sit for 5 minutes, then whisk again to break up any clumps. Cover and refrigerate for at least 2 hours or overnight, until the pudding is thick and creamy.
- 3
Stir the pudding well before serving. If it's too thick, add a splash of milk to loosen it to your liking.
- 4
Divide the pudding between two serving glasses or bowls.
- 5
Top each with half of the diced mango, half of the granola, and half of the berries. Serve immediately.
