Ingredients

  • ¼ cup chia seeds
  • 1 cup milk (or yogurt)
  • 1 tbsp honey or maple syrup
  • ½ tsp vanilla extract
  • ½ cup mango, diced
  • ¼ cup granola
  • ¼ cup berries (raspberries or pomegranate seeds)

Instructions

    In a bowl or jar, whisk together the 1/4 cup chia seeds, 1 cup milk, 1 tbsp honey, and 1/2 tsp vanilla extract until well combined.

    Let the mixture sit for 5 minutes, then whisk again to break up any clumps. Cover and refrigerate for at least 2 hours or overnight, until the pudding is thick and creamy.

    Stir the pudding well before serving. If it's too thick, add a splash of milk to loosen it to your liking.

    Divide the pudding between two serving glasses or bowls.
