Ingredients
- 1 cup all-purpose flour
- 1.5 cups milk
- 2 large eggs
- 3 tbsp butter
- 1.5 cups shredded cheese (like cheddar or mozzarella)
- ½ tsp salt
- ¼ tsp black pepper

In a blender, combine 1 cup flour, 1 cup milk, 2 eggs, 1 tbsp melted butter, and 1/4 tsp salt. Blend until smooth, about 30 seconds. Let rest for 10 minutes.

Heat a 9-inch nonstick skillet over medium heat. Lightly butter the pan. Pour in 1/4 cup of batter, swirling to coat the bottom. Cook until edges are golden, about 1 minute. Flip and cook 30 seconds more. Repeat with remaining batter to make 6 crepes.

In a small saucepan, melt 2 tbsp butter over medium heat. Whisk in 2 tbsp flour and cook for 1 minute until bubbly. Gradually whisk in 1/2 cup milk and cook, stirring, until thickened, about 3 minutes. Season with 1/4 tsp salt and 1/4 tsp pepper.

Preheat oven to 350°F. Place a crepe on a plate, sprinkle 1/4 cup cheese in the center, fold in half, then fold in half again to form a triangle. Place in a baking dish. Repeat with remaining crepes and cheese.

Pour the white sauce over the crepes, spreading to cover. Sprinkle any remaining cheese on top. Bake until hot and bubbly, about 15 minutes. Serve warm.
