Ingredients

  • ¾ lb beef sirloin strip or skirt steak
  • 2 whole jalapeños
  • ½ medium yellow onion
  • 4 oz oaxaca or mozzarella cheese, sliced
  • ½ whole lime
  • 2 tbsp fresh cilantro, chopped

Instructions

    Slice the beef into thin strips about 1/4-inch thick, cutting against the grain.

    Heat oil in a 12-inch skillet over medium-high heat until shimmering, about 1 minute.

    Working in batches, sear beef strips 90 seconds per side until edges brown. Transfer to a plate.

    In the same skillet, char jalapeños and onion slices until edges blacken, 4–5 minutes.

    Return beef to the skillet, scatter cheese slices over the top, cover for 30 seconds until melted.

    Squeeze lime juice over everything, top with cilantro, and serve straight from the skillet.
