Ingredients
- 1 lb beef sirloin steak or skirt steak
- 2 whole poblano pepper
- 1 medium yellow onion
- 6 oz Oaxaca cheese (or mozzarella)
- 1 whole jalapeño
- 1 whole lime
- ¼ cup fresh cilantro

Slice beef against the grain into 1/4-inch strips. Cut poblanos and onion into 1-inch pieces. Slice jalapeño thin.

Heat oil in a large skillet over medium-high until shimmering, ~90 seconds.

Sear beef strips in one layer, without stirring, for 90 seconds until edges brown. Flip and cook 60 more seconds. Remove to a plate.

Add onion and poblano to the same skillet. Cook, stirring often, until charred and soft, ~6 minutes.

Return beef to skillet with jalapeño and a pinch of salt. Tear cheese into pieces and scatter on top.
