Ingredients

  • 1 lb beef sirloin steak or skirt steak
  • 2 whole poblano pepper
  • 1 medium yellow onion
  • 6 oz Oaxaca cheese (or mozzarella)
  • 1 whole jalapeño
  • 1 whole lime
  • ¼ cup fresh cilantro

Instructions

    Slice beef against the grain into 1/4-inch strips. Cut poblanos and onion into 1-inch pieces. Slice jalapeño thin.

    Heat oil in a large skillet over medium-high until shimmering, ~90 seconds.

    Sear beef strips in one layer, without stirring, for 90 seconds until edges brown. Flip and cook 60 more seconds. Remove to a plate.

    Add onion and poblano to the same skillet. Cook, stirring often, until charred and soft, ~6 minutes.

    Return beef to skillet with jalapeño and a pinch of salt. Tear cheese into pieces and scatter on top.

    Cover and cook 2 minutes until cheese melts. Squeeze lime over the top, garnish with cilantro, serve hot.
