Ingredients
- 2 lb yellow squash, sliced 1/4-inch thick
- 1.5 cups sharp cheddar cheese, shredded
- 3 tbsp butter
- ½ medium yellow onion, thinly sliced
- ¾ cup buttery round crackers (Ritz or similar), crushed
- 1 pinch salt and black pepper to taste

Preheat oven to 375°F. Butter a 9-by-13-inch baking dish.

Layer half the squash slices in the dish, then half the onion, then 3/4 cup cheese. Season with salt and pepper.

Repeat with remaining squash, onion, and cheese. Dot the top with 2 tbsp of the butter.

Toss crushed crackers with the remaining 1 tbsp butter and scatter over the top.
