Ingredients

  • 2 lb yellow squash, sliced 1/4-inch thick
  • 1.5 cups sharp cheddar cheese, shredded
  • 3 tbsp butter
  • ½ medium yellow onion, thinly sliced
  • ¾ cup buttery round crackers (Ritz or similar), crushed
  • 1 pinch salt and black pepper to taste

Instructions

    Preheat oven to 375°F. Butter a 9-by-13-inch baking dish.

    Layer half the squash slices in the dish, then half the onion, then 3/4 cup cheese. Season with salt and pepper.

    Repeat with remaining squash, onion, and cheese. Dot the top with 2 tbsp of the butter.

    Toss crushed crackers with the remaining 1 tbsp butter and scatter over the top.

    Bake until squash is tender and the top is golden brown, 18–20 minutes.

    Let cool 2 minutes, then serve hot.
