Ingredients

  • 4 slices bread
  • 2 large eggs
  • ¼ cup milk
  • 1 cup shredded cheese
  • 2 cups canned crushed tomatoes
  • 1 teaspoon dried oregano

    Tear the 4 bread slices into small pieces and place in a large bowl. Add the 2 eggs, 1/4 cup milk, and 1 cup shredded cheese. Mix with your hands until the bread is well coated and the mixture holds together when pressed.

    Shape the mixture into 4 equal balls, then flatten each into a 1-inch thick patty. If the mixture feels too wet, add a little more bread; if too dry, add a splash more milk.

    Heat a large nonstick skillet over medium heat and add 1 tablespoon olive oil. Cook the 4 dumplings for 3-4 minutes per side, until golden brown and crispy on both sides.

    Pour the 2 cups crushed tomatoes and 1 teaspoon oregano into the skillet around the dumplings. Stir gently to combine, then bring to a simmer. Cook for 5-7 minutes, until the sauce thickens slightly and the dumplings are heated through.
