Ingredients

  • 2 cups shredded cheddar cheese
  • ½ cup all-purpose flour
  • 1 cup milk
  • ¼ cup chopped fresh dill
  • 2 medium, sliced scallions
  • ½ cup for frying vegetable oil

Instructions

  1. 1

In a medium saucepan, whisk together the 0.5 cup flour and 1 cup milk until smooth. Cook over medium heat, stirring constantly, until the mixture thickens into a paste, about 3-4 minutes.

  2. 2

Remove from heat and stir in the 2 cups cheddar cheese, 0.25 cup dill, and 2 sliced scallions. Season with salt and pepper if you like. Let cool slightly until handleable, about 5 minutes.

  3. 3

Shape the mixture into 12 small logs or balls. Heat the 0.5 cup oil in a skillet over medium-high until shimmering, about 2 minutes.

  4. 4

Fry the croquettes in batches, turning occasionally, until golden brown and crisp on all sides, about 3-4 minutes per batch. Drain on paper towels and serve warm.
