Ingredients
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- ½ cup milk
- 2 tbsp butter
- 2 tbsp flour
- 2 cups shredded lettuce
- 1 large tomato
- 2 cups corn chips

In a medium saucepan over medium heat, melt the 2 tbsp butter. Whisk in the 2 tbsp flour and cook for 1 minute until bubbly.

Gradually whisk in the 0.5 cup milk and continue stirring until the sauce thickens, about 3-4 minutes. It should coat the back of a spoon.

Reduce heat to low and add the 2 cups shredded cheddar cheese. Stir until melted and smooth, about 2 minutes. Season with salt and pepper if desired.

Warm the 4 large flour tortillas in a dry skillet over medium heat for 30 seconds per side, until soft and pliable.

Divide the cheese sauce among the tortillas, spreading it down the center. Top each with 0.5 cup shredded lettuce, a few tomato slices, and 0.5 cup corn chips.
