Ingredients

  • 1 medium, peeled and cored pineapple, fresh
  • 3 tbsp honey
  • ¼ tsp red pepper flakes
  • 1 whole lime
  • 1 pinch fleur de sel or sea salt
  • 6 leaves, torn fresh mint leaves (optional)

    Cut pineapple lengthwise into 4 spears, then cut each in half crosswise to make 8 pieces.

    Heat a cast iron skillet or grill pan over medium-high heat until it smokes slightly, about 2 minutes.

    Lay pineapple pieces flat on the hot pan without moving them — listen for a steady sizzle.

    Flip once when edges turn deep golden brown with char marks, then cook the other side 2 minutes.

    Warm honey with red pepper flakes in a small bowl over the stove or microwave for 30 seconds until thin.

    Slide pineapple onto a platter, drizzle with hot honey, squeeze lime juice over top, sprinkle salt and mint, serve immediately.
