Ingredients

  • 8 chops lamb chops (1-inch thick)
  • 1 tbsp ground cumin
  • 1 tsp ground coriander
  • ¼ tsp ground cinnamon
  • 2 tbsp honey
  • 1 whole lemon

Instructions

  1. 1

Preheat oven to 475°F. Pat lamb chops dry with paper towels.

  2. 2

Mix cumin, coriander, cinnamon, salt, and pepper in a small bowl. Rub evenly over all sides of the chops.

  3. 3

Drizzle a sheet pan with olive oil and heat in the oven for 2 minutes until smoking hot.

  4. 4

Place chops on the hot pan in a single layer. Roast 6 minutes without moving—edges will char and develop a crust.

  5. 5

Flip each chop and roast 4 more minutes. Centers should feel springy; an instant-read thermometer reads 130°F for medium-rare.

  6. 6

Drizzle with honey and squeeze lemon juice over the top. Serve immediately with fresh herbs if you have them.
