Ingredients

  • 1.5 lb kielbasa sausage
  • 2 large bell peppers (red, yellow, or mix)
  • 1 large yellow onion
  • 3 tbsp whole grain mustard
  • 2 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 1 tsp caraway seeds (optional but traditional)

Instructions

    Preheat oven to 450°F. Slice kielbasa on a diagonal into 1-inch-thick coins.

    Cut peppers into 1-inch chunks; slice onion into thick wedges. Toss with oil, salt, and pepper on a sheet pan.

    Scatter kielbasa coins over vegetables. Roast for 12–14 minutes until sausage edges char and vegetables soften.

    Whisk mustard, vinegar, caraway seeds, and a pinch of salt in a small bowl.

    Remove pan from oven. Drizzle glaze over kielbasa and vegetables; toss to coat.
