Ingredients
- 1.5 lb kielbasa sausage
- 2 large bell peppers (red, yellow, or mix)
- 1 large yellow onion
- 3 tbsp whole grain mustard
- 2 tbsp apple cider vinegar
- 2 tbsp olive oil
- 1 tsp caraway seeds (optional but traditional)

Preheat oven to 450°F. Slice kielbasa on a diagonal into 1-inch-thick coins.

Cut peppers into 1-inch chunks; slice onion into thick wedges. Toss with oil, salt, and pepper on a sheet pan.
