Ingredients
- 1.5 lb kielbasa (smoked Polish sausage)
- 2 large yellow onion, sliced thin
- 3 tbsp whole grain mustard
- ½ tsp caraway seeds (optional, traditional)
- 2 tbsp fresh dill, chopped

Slice kielbasa into 3/4-inch thick rounds. Heat oil in a large skillet over medium-high until it shimmers.

Sear kielbasa rounds 2-3 minutes per side without moving until edges are dark brown and crispy. Transfer to a plate.

Add sliced onions to the same skillet, season with salt and pepper, stir often until deeply golden, ~10 minutes.

Stir in caraway seeds (if using) for 30 seconds until fragrant, then add mustard and stir to coat.

Return kielbasa to the skillet and toss to warm through, ~1 minute. Season onions and kielbasa with salt and pepper.
