Ingredients

  • 4 cups beef broth
  • ½ pound ground beef
  • 2 medium carrots
  • 2 medium potatoes
  • ½ medium onion
  • ½ teaspoon salt

Instructions

    In a medium bowl, mix the 0.5 lb ground beef with 0.25 tsp salt. Roll into 12 small meatballs, about 1 inch each.

    Peel and dice the 2 carrots and 2 potatoes into 1/2-inch cubes. Finely chop the 0.5 onion.

    In a large pot, bring the 4 cups beef broth to a boil over high heat. Add the carrots, potatoes, and onion. Reduce heat to medium and simmer until vegetables are tender, about 10 minutes.

    Gently drop the meatballs into the simmering broth. Cook until they are cooked through and float to the surface, about 5 minutes. Season with the remaining 0.25 tsp salt to taste.
