Ingredients
- ½ lb shrimp, peeled and deveined
- 2 stalks lemongrass, cut into 2-inch pieces and smashed
- 4 leaves kaffir lime leaves
- 2 tbsp fresh lime juice
- 2 peppers Thai chili peppers, sliced
- 1 cup cherry tomatoes, halved

In a pot, bring 4 cups water to a boil. Add the 2 lemongrass stalks and 4 kaffir lime leaves; simmer for 5 minutes until fragrant.

Add the 1 cup cherry tomatoes and 2 Thai chili peppers; cook for 2 minutes until tomatoes soften slightly.

Add the 0.5 lb shrimp and cook until pink and opaque, about 3 minutes.

Remove from heat, stir in the 2 tbsp lime juice, and season with salt to taste. Serve hot, garnished with cilantro if desired.
