Ingredients

  • ½ lb shrimp, peeled and deveined
  • 2 stalks lemongrass, cut into 2-inch pieces and smashed
  • 4 leaves kaffir lime leaves
  • 2 red chili peppers, sliced
  • 1 medium tomato, cut into wedges
  • 4 cups chicken broth

Instructions

    In a pot, bring the 4 cups chicken broth to a boil over high heat. Add the 2 lemongrass stalks and 4 kaffir lime leaves, reduce heat to medium, and simmer until fragrant, about 5 minutes.

    Add the 2 sliced red chili peppers and 1 tomato wedges to the pot. Cook until the tomato softens slightly, about 3 minutes.

    Add the 0.5 lb shrimp and cook until they turn pink and opaque, about 3-4 minutes. Season with salt to taste. Serve hot, with lime wedges if desired.
