Ingredients

  • 1 lb squid (cleaned, bodies and tentacles)
  • 3 tbsp Thai red chili paste
  • 1 whole lime (juiced)
  • 1.5 tbsp fish sauce
  • 3 clove garlic (minced)
  • 2 tbsp olive oil

Instructions

    Pat squid dry with paper towels. Score the bodies in a crosshatch pattern, cutting halfway through.

    Mix chili paste, lime juice, fish sauce, garlic, and olive oil in a small bowl until smooth.

    Toss squid with the chili paste until fully coated. Spread on a sheet pan in a single layer.

    Roast at 475°F until edges are charred and tentacles curl, 10-12 minutes.

    Squeeze a fresh lime wedge over top. Serve hot with jasmine rice or over greens.
