Ingredients
- 6 slices sponge cake slices
- 1.5 cups heavy cream
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 2 cups mixed berries (strawberries, blackberries, raspberries)

Line a 9x5 inch loaf pan with plastic wrap, leaving overhang. Arrange 3 sponge cake slices in the bottom, trimming to fit if needed.

In a large bowl, beat 1.5 cups heavy cream, 3 tbsp powdered sugar, and 1 tsp vanilla extract until stiff peaks form, about 3-4 minutes.

Spread half of the whipped cream over the cake layer. Top with 1 cup of mixed berries, then add another layer of cake slices.

Spread the remaining whipped cream over the top and smooth it. Cover with plastic wrap and refrigerate for at least 2 hours, until set.

To serve, lift out using the plastic wrap, invert onto a plate, and top with the remaining 1 cup of berries. Slice and enjoy.
