- 1 head cauliflower
- 2 tbsp olive oil
- 1 cup cheddar cheese
- ½ cup heavy cream
- ½ tsp salt
- ¼ tsp black pepper

Preheat oven to 400°F. Cut the 1 head cauliflower into small florets and toss with 2 tbsp olive oil, 0.5 tsp salt, and 0.25 tsp black pepper in a large bowl.

Spread the cauliflower in a single layer in a 9x13 inch baking dish. Roast for 15 minutes, until slightly tender and browned at the edges.

Pour 0.5 cup heavy cream over the roasted cauliflower and sprinkle with 1 cup shredded cheddar cheese.
