Ingredients
- 4 medium carrots
- 1 cup frozen peas
- ½ cup heavy cream
- 1 piece (about 6 oz) beef cube steak
- 2 tbsp butter
- ½ tsp salt
Instructions
- 1
Peel and slice the 4 carrots into 1/4 inch rounds. Pat the 1 beef cube steak dry and season both sides with 1/4 tsp of the salt.
- 2
Melt 1 tbsp of the butter in a skillet over medium-high heat. Add the beef cube and sear until browned on both sides, about 3 minutes per side. Remove to a plate and set aside.
- 3
Add the remaining 1 tbsp butter and the sliced carrots to the same skillet. Cook over medium heat, stirring occasionally, until the carrots begin to soften, about 5 minutes.
- 4
Add the 1 cup frozen peas and 1/2 cup heavy cream. Stir to combine, scraping up any browned bits. Simmer until the cream thickens slightly and the carrots are tender, about 5 minutes. Season with the remaining 1/4 tsp salt.
- 5
Slice the seared beef cube into bite-sized pieces and place on top of the creamy carrots. Serve hot.
