Ingredients

  • 400 g spaghetti
  • 150 g pancetta or guanciale
  • 4 large eggs
  • 100 g Parmesan cheese
  • 1 tsp black pepper
  • 1 tbsp salt
  • 1 tbsp olive oil

Instructions

    Cook spaghetti in salted boiling water until al dente, reserving 1 cup pasta water.

    In a skillet, cook pancetta with olive oil over medium heat until crispy, about 5 minutes.

    Whisk eggs, grated Parmesan, and black pepper in a bowl until smooth.

    Drain spaghetti and add to skillet with pancetta, tossing to coat.

    Remove from heat, quickly stir in egg mixture, adding pasta water to create a creamy sauce.

    Serve immediately with extra Parmesan and pepper.
