Caramelized Quince

Ingredients

  • 3 medium quince
  • 1 cup sugar
  • 2 cups water
  • 1 medium lemon
  • 1 teaspoon vanilla extract

    Peel and core the 3 quince, then cut each into 8 wedges. Rub the wedges with the cut side of the 1 lemon to prevent browning.

    In a large heavy pot, combine the 1 cup sugar and 2 cups water. Bring to a boil over high heat, stirring until the sugar dissolves, about 3 minutes.

    Add the quince wedges and the juice of the 1 lemon to the syrup. Reduce heat to low, cover, and simmer gently until the quince are just tender, about 30 minutes.

    Uncover and add the 1 teaspoon vanilla extract. Increase heat to medium and boil, stirring occasionally, until the syrup thickens and turns deep ruby, about 20 minutes.

    Continue cooking until the quince are fully tender and the syrup coats the back of a spoon, about 10 more minutes. The quince should be a rich red color and easily pierced with a fork.

    Remove from heat and let cool slightly. Serve warm or at room temperature, spooning the syrup over the quince.
