Caramelized Onion & Raisin Pasta

Ingredients
- 1.5 lb yellow onions, sliced thin
- 3 tbsp olive oil
- ⅓ cup raisins
- 2 tbsp red wine vinegar
- 8 oz spaghetti or pappardelle
- ¼ cup pine nuts, toasted (optional)

Heat oil in a large skillet over medium. Add onions and a pinch of salt.

Cook onions, stirring occasionally, until deep golden brown and very soft, 12–14 minutes.

Stir in raisins and vinegar, scraping up any browned bits. Cook 1 minute until fragrant.

Boil spaghetti in salted water until al dente, about 10 minutes. Reserve 1 cup pasta water.

Add drained pasta to the skillet with 0.5 cup pasta water. Toss over medium heat until silky, 1–2 minutes.

Divide between bowls. Top with pine nuts and cracked black pepper. Serve hot.
