Ingredients
- 2 cups milk
- 2 tbsp butter
- 1 tsp vanilla extract
- 2 large eggs
- 1 cup sugar
- 1 cup flour

Preheat oven to 375°F. Grease a 12-cup muffin tin with butter or nonstick spray.

In a saucepan, heat 2 cups milk, 2 tbsp butter, and 1 tsp vanilla over medium until butter melts and milk is warm, about 3 minutes. Do not boil.

In a bowl, whisk 2 eggs and 1 cup sugar until pale. Gradually whisk in 1 cup flour until smooth.

Slowly pour the warm milk mixture into the egg mixture, whisking constantly until combined. The batter will be thin.

Pour batter into prepared muffin cups, filling each about 3/4 full. Bake until deep golden brown and puffed, about 25 minutes. Cool in pan for 5 minutes, then turn out onto a rack. Dust with powdered sugar if desired.
