Ingredients

  • 2 packets (100g each) frozen acai berry puree packets
  • ¾ cup unsweetened almond milk
  • 1 medium, sliced frozen banana
  • 1 tablespoon honey
  • ½ cup low-sugar granola
  • ½ cup fresh blueberries
  • ½ cup, sliced fresh strawberries
  • ¼ cup unsweetened shredded coconut
  • ¼ cup, roughly chopped raw almonds
  • ½ tablespoon, for drizzle raw honey

    Remove 2 frozen acai berry puree packets from the freezer and let them sit at room temperature for 1-2 minutes to soften just slightly—this makes them easier to break apart. Pour 0.75 cup of unsweetened almond milk into a high-powered blender.

    Break the softened acai packets into chunks and add them to the blender along with 1 medium frozen banana (sliced) and 1 tablespoon of honey. Blend on high speed for 45-60 seconds, stopping once or twice to scrape down the sides with a spatula, until you have a thick, smooth, soft-serve-like consistency. The mixture should be spoonable, not drinkable—if it's too thin, add a bit more acai or frozen banana; if too thick, add a splash more almond milk.

    Pour the acai mixture evenly into 2 bowls. Use the back of a spoon to gently smooth and create a slight well in the center of each bowl—this gives you space to nestle your toppings.

    Arrange the toppings strategically for both texture and visual appeal. Scatter 0.25 cup of low-sugar granola (per bowl) around the edges and center, then add 0.25 cup of fresh blueberries (per bowl) and 0.25 cup of sliced fresh strawberries (per bowl) in clusters. Sprinkle 2 tablespoons of unsweetened shredded coconut (per bowl) and 2 tablespoons of roughly chopped raw almonds (per bowl) over the top.
