Ingredients

  • 1.5 lbs shrimp, large (peeled + deveined)
  • 12 oz smoked sausage (sliced into 1-inch rounds)
  • 1 lb baby potatoes (halved)
  • 3 ears corn on the cob (cut into 2-inch pieces)
  • 6 tbsp butter
  • 3 tbsp Cajun seasoning (or 2 tsp paprika + 1 tsp cayenne + 1 tsp garlic powder + salt/pepper)
  • 2 whole limes (halved)
  • 6 cups water

Instructions

    Bring salted water to a boil in a large pot over high heat, ~5 minutes.

    Add potatoes and sausage to boiling water. Cook 10 minutes until potatoes are nearly tender.

    Stir in corn and Cajun seasoning. Boil 3 more minutes, then add shrimp.

    Cook shrimp 2–3 minutes until pink and opaque throughout (do not overcook).

    Remove from heat. Stir in butter until melted and glossy.

    Divide into bowls. Serve hot with lime wedges and extra melted butter for dipping.
