Ingredients
- 2 lbs Live crawfish or shrimp
- 12 oz Andouille sausage, sliced into 2-inch pieces
- 4 pieces Corn on the cob, cut into 2-inch pieces
- 1.5 lbs Baby potatoes, halved
- 3 tbsp Cajun seasoning (paprika, cayenne, garlic, thyme blend)
- 1 whole Lemon, halved
Instructions

Fill a large pot with 6 quarts water. Add Cajun seasoning, lemon halves, and a generous pinch of salt.

Bring to a rolling boil over high heat, then add sausage and potatoes.

Boil 8 minutes until potatoes start to soften and sausage renders.

Add corn, stir, then add crawfish or shrimp. Return to boil immediately.

Boil 3–4 minutes until crawfish tails curl and shrimp turn opaque pink. Do not overcook.

Drain in a colander. Spread onto a platter lined with newspaper. Serve hot with cornbread or crusty bread.
