Ingredients
- ¾ lb shrimp, peeled and deveined
- ½ lb mussels, cleaned and debearded
- 8 oz smoked sausage, sliced into 1-inch rounds
- 2 ears corn on the cob, halved crosswise
- ¾ lb baby potatoes, halved
- 2 whole eggs
- 2 tbsp Old Bay seasoning (or cajun spice blend)
- 4 cups chicken broth

Bring broth and Old Bay to a rolling boil in a large pot over high heat, ~3 minutes.

Add potatoes and corn. Boil uncovered until potatoes are fork-tender, ~7 minutes.

Slide in sausage, shrimp, and mussels. Stir gently and boil until shrimp turns pink and mussels open, ~4 minutes.

Gently lower eggs into the simmering broth. Cook for 6 minutes until just-set yolks.
