Ingredients

  • ¾ lb shrimp, peeled and deveined
  • ½ lb mussels, cleaned and debearded
  • 8 oz smoked sausage, sliced into 1-inch rounds
  • 2 ears corn on the cob, halved crosswise
  • ¾ lb baby potatoes, halved
  • 2 whole eggs
  • 2 tbsp Old Bay seasoning (or cajun spice blend)
  • 4 cups chicken broth

Instructions

    Bring broth and Old Bay to a rolling boil in a large pot over high heat, ~3 minutes.

    Add potatoes and corn. Boil uncovered until potatoes are fork-tender, ~7 minutes.

    Slide in sausage, shrimp, and mussels. Stir gently and boil until shrimp turns pink and mussels open, ~4 minutes.

    Gently lower eggs into the simmering broth. Cook for 6 minutes until just-set yolks.

    Ladle everything into bowls, discarding any mussels that didn't open. Serve hot.
