25-Min Cajun Seafood Boil

Ingredients
- 1 lb red potatoes, halved
- ¾ lb smoked sausage, sliced into 1-inch rounds
- 1 lb shrimp, peeled and deveined
- ½ lb crawfish tail meat (thawed if frozen)
- 3 ears fresh corn, cut into 2-inch pieces
- 3 tbsp Old Bay seasoning
- 2 tbsp hot sauce (Frank's or similar)
- ¼ lb butter, for serving

Fill a large pot with 4 quarts water, salt generously, and bring to a rolling boil over high heat.

Add potatoes and sausage. Boil for 8 minutes until potatoes just begin to soften.

Stir in corn. Continue boiling 3 minutes, then add shrimp and crawfish.

Sprinkle Old Bay over the top and stir gently. Boil 2–3 minutes until shrimp turns opaque and crawfish is heated through.

Drain everything into a colander, reserving 1 cup cooking liquid if needed to adjust seasoning.

Slide onto a large platter or into a shallow bowl. Dot with melted butter, drizzle hot sauce over top, and serve immediately.
