Ingredients

  • 8 oz andouille sausage, sliced into 1-inch rounds
  • ½ lb shrimp, peeled and deveined
  • ½ lb mussels, cleaned and debearded
  • 2 ears corn on the cob, cut into 2-inch pieces
  • 4 tbsp butter
  • 2 tbsp cajun seasoning
  • 1 cup chicken broth
  • 1 whole lemon, halved

Instructions

    Melt butter in a large pot over medium-high heat. Add sausage and brown for 3 minutes.

    Pour in broth and sprinkle cajun seasoning. Add corn and lemon halves; bring to a boil.

    Add shrimp and mussels to the pot. Cook uncovered for 5 minutes until mussels open.

    Discard any unopened mussels. Taste and adjust seasoning with salt and pepper as needed.

    Divide seafood, sausage, and corn into bowls. Ladle broth over top and serve immediately hot.
