Ingredients
- 2 lbs potatoes (russet or yukon gold), peeled and halved
- 1 bunch scallions, chopped (white and light green parts)
- ¾ cup whole milk or half-and-half
- 6 tbsp butter, divided
- 1 medium yellow onion, thinly sliced
- 1 pinch salt and black pepper to taste

Boil potatoes in salted water until fork-tender, about 12 minutes. Drain well.

While potatoes cook, melt 2 tbsp butter in a skillet over medium heat.

Add sliced onion and cook, stirring occasionally, until golden and crispy, about 6 minutes. Transfer to a paper towel.

Warm milk in the same skillet, then add drained potatoes. Mash until smooth but still slightly chunky.

Fold in scallions. Season with salt and pepper to taste. Transfer to a serving bowl.

Make a well in the center. Add remaining 4 tbsp butter to the well. Top with crispy onions. Serve hot.
