Ingredients
- 4 cups all-purpose flour
- 2.25 teaspoons active dry yeast
- 1.5 cups warm water
- 3 tablespoons sugar
- 1.5 teaspoons salt
- 4 tablespoons unsalted butter
- 1 large egg
- 2 tablespoons milk

In a small bowl, dissolve the 2.25 tsp yeast and 1 tbsp sugar in 1/2 cup warm water (110°F). Let stand until foamy, about 5-10 minutes.

In a large bowl, mix the 4 cups flour, remaining 2 tbsp sugar, and 1.5 tsp salt. Cut in the 4 tbsp butter until crumbly.

Add the yeast mixture, remaining 1 cup warm water, and 1 egg. Stir until a shaggy dough forms.

Turn dough onto a floured surface and knead until smooth and elastic, about 8-10 minutes. Place in a greased bowl, cover, and let rise until doubled, about 1 hour.

Punch down the dough and divide into 12 equal pieces. Shape each into a smooth ball and place on a baking sheet lined with parchment paper, spacing 2 inches apart.

Cover the buns loosely with plastic wrap and let rise until puffy, about 30-45 minutes.

Preheat oven to 375°F. Brush the buns with the 2 tbsp milk and bake until golden brown and hollow-sounding when tapped, about 18-20 minutes.
