Ingredients

- 1.25 cups warm water
- 2.25 teaspoons active dry yeast
- 2 tablespoons sugar
- 1.5 teaspoons salt
- 2 tablespoons olive oil

In a large bowl, combine the 1.25 cups warm water, 2 tbsp sugar, and 2.25 tsp yeast. Let sit until foamy, about 5-10 minutes.

Add the 3.5 cups flour, 1.5 tsp salt, and 2 tbsp olive oil to the yeast mixture. Stir until a shaggy dough forms.

Turn the dough onto a floured surface and knead until smooth and elastic, about 8-10 minutes. The dough should spring back when poked.

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm spot until doubled in size, about 1 hour.

Punch down the dough, shape it into a loaf, and place it in a greased 9x5-inch loaf pan. Cover and let rise again until it crests the rim, about 30-45 minutes.
