  • 3 tbsp extra virgin olive oil
  • 2 large ripe tomatoes
  • 2 whole garlic cloves
  • ½ cup fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • ½ tsp sea salt
  • ¼ tsp black pepper

    Dice tomatoes into small chunks, removing excess seeds and juice. Mince garlic cloves finely. Roughly chop fresh basil.

    Slice baguette diagonally into 0.5-inch thick slices.

    Brush both sides of bread slices lightly with 3 tbsp olive oil.

    Toast on a skillet or grill over medium-high heat for 1-2 minutes per side until golden and crispy.

    In a bowl, combine diced tomatoes, minced garlic, chopped basil, 2 tbsp olive oil, balsamic vinegar, salt, and pepper. Mix gently.
