Ingredients

  • 1 lb heirloom or cherry tomatoes, mixed colors
  • 8 oz burrata cheese
  • ½ cup fresh basil leaves
  • 1 whole lemon
  • 1 whole garlic clove, minced
  • 3 tbsp extra-virgin olive oil
  • ¼ tsp fleur de sel or sea salt

Instructions

    Cut large tomatoes into quarters; halve the cherry tomatoes. Arrange on a serving plate.

    Whisk lemon juice, minced garlic, olive oil, and salt in a small bowl until emulsified.

    Tear basil leaves by hand and scatter over the tomatoes.

    Nestle burrata in the center of the plate, breaking it gently so the creamy center oozes out.

    Drizzle dressing over everything. Taste and adjust salt if needed. Serve immediately.
