Ingredients

  • 2 medium peaches, halved and pitted
  • 8 oz burrata cheese
  • 3 cups arugula
  • 1 cup cherry tomatoes, halved
  • 1 cup popcorn, popped and lightly salted
  • ½ lemon + 3 tbsp oil + pinch salt lemon, juiced, plus olive oil and salt for vinaigrette

Instructions

    Heat a grill or grill pan to medium-high until water flicks sizzle on contact.

    Brush peach halves lightly with olive oil and grill cut-side down until caramelized, ~3 minutes per side.

    Whisk lemon juice, 3 tablespoons olive oil, and a pinch of salt together in a small bowl.

    Toss arugula and tomatoes with the vinaigrette and divide between two plates.

    Top each plate with a warm grilled peach and a ball of burrata cheese.

    Scatter popcorn over the top and serve immediately.
