Ingredients

  • 2 medium ripe peaches
  • 8 oz burrata cheese
  • 3 cups fresh arugula
  • 2 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • ¼ tsp fleur de sel or sea salt
  • ⅛ tsp black pepper

Instructions

    Halve the peaches and remove the pit, then slice each half into 4–5 wedges.

    Whisk balsamic vinegar, olive oil, salt, and pepper in a small bowl until combined.

    Place arugula in a large bowl and drizzle with half the vinaigrette, toss gently.

    Divide dressed arugula between two plates and arrange peach slices around it.

    Tear burrata into rough pieces and scatter over the peaches and arugula.

    Drizzle with remaining vinaigrette and serve immediately.
