Ingredients

  • 2 whole beef cutlets
  • 1 large egg
  • ½ cup breadcrumbs
  • 1 cup tomato sauce
  • 2 tablespoons chives
  • 3 tablespoons olive oil

Instructions

  1. 1

Season the 2 beef cutlets with salt and pepper. Beat the 1 egg in a shallow bowl. Place the 0.5 cup breadcrumbs on a plate.

  2. 2

Dip each cutlet into the beaten egg, then press into the breadcrumbs, coating both sides evenly.

  3. 3

Heat the 3 tbsp olive oil in a large skillet over medium-high. Fry the cutlets until golden brown and cooked through, about 3 minutes per side.

  4. 4

In a small saucepan, warm the 1 cup tomato sauce over medium heat until hot and bubbling, about 5 minutes.

  5. 5

Spoon the warm tomato sauce over the cutlets and sprinkle with the 2 tbsp chopped chives before serving.
