Ingredients

  • 4 piece beef cutlets
  • 2 large eggs
  • 1 cup breadcrumbs
  • 2 medium potatoes
  • 1 cup green beans
  • ¼ cup mayonnaise

    Pound the 4 beef cutlets to 1/4 inch thickness. Season both sides with salt and pepper.

    Set up a breading station: beat the 2 eggs in a shallow bowl, and place the 1 cup breadcrumbs on a plate. Dip each cutlet in the egg, then coat with breadcrumbs, pressing gently to adhere.

    Heat 2 tbsp oil in a large skillet over medium-high. Cook the cutlets until golden brown and cooked through, about 3-4 minutes per side. Transfer to a plate.

    Meanwhile, boil the 2 medium potatoes (cut into star shapes) and 1 cup green beans in salted water until tender, about 10 minutes. Drain.

    Mix the 1/4 cup mayonnaise with 1 tsp lemon juice and a pinch of salt for the dipping sauce. Serve the cutlets with the potatoes, beans, and sauce.
