Brazilian Sun-Dried Beef with Butter

Ingredients

  • 1.5 lb beef steak (such as sirloin or flank)
  • 2 tbsp coarse salt
  • 4 tbsp unsalted butter
  • 3 cloves garlic cloves
  • 1 tsp black pepper

    Rub the 1.5 lb beef steak all over with the 2 tbsp coarse salt, pressing it in. Place on a wire rack over a tray and refrigerate uncovered for 24 hours to air-dry.

    After 24 hours, rinse the beef under cold water to remove excess salt, then pat completely dry with paper towels. Slice against the grain into 1/4 inch thick strips.

    Melt the 4 tbsp unsalted butter in a large skillet over medium-high heat. Add the 3 minced garlic cloves and cook until fragrant, about 1 minute, stirring constantly.

    Add the beef strips in a single layer (work in batches if needed) and sear without moving for 2-3 minutes until browned on one side.

    Flip the beef and cook for another 2-3 minutes until browned on the other side and cooked to your liking. The beef should be caramelized at the edges and tender inside.

    Season with the 1 tsp black pepper, toss to coat in the butter sauce, and serve immediately with the pan juices spooned over the top.
