Ingredients

  • 1 lb beef sirloin
  • 1 cup long-grain white rice
  • 1 medium red bell pepper
  • 2 tbsp fresh thyme
  • 6 whole cherry tomatoes
  • 1 cup potato chips
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 cups water

Instructions

    Season beef slices with salt and pepper; let rest for 10 minutes.

    Grill beef over high heat for 3-4 minutes per side until medium-rare.

    In a pot, heat olive oil and sauté diced red bell pepper for 2 minutes.

    Add rice and water, bring to boil, then simmer covered for 15 minutes.
