Ingredients

  • 4 links bratwurst
  • 1.5 lb potatoes
  • 2 cups sauerkraut
  • 1 medium yellow onion
  • 2 tbsp olive oil
  • 2 tbsp parsley

Instructions

  1. 1

Thinly slice the 1 medium onion and cut the 1.5 lb potatoes into 1/2 inch cubes. Pat the 4 bratwurst links dry with a paper towel.

  2. 2

Heat the 2 tbsp olive oil in a large skillet over medium-high. Add the bratwurst and cook until browned on all sides, about 6 minutes. Transfer to a plate.

  3. 3

Add the potatoes and onion to the same skillet. Cook over medium-high, stirring occasionally, until the potatoes are golden and tender, about 10 minutes.

  4. 4

Stir in the 2 cups sauerkraut and cook until heated through, about 3 minutes. Return the bratwurst to the skillet and warm for 2 minutes.

  5. 5

Serve the bratwurst with the potato-sauerkraut mixture, garnished with the 2 tbsp chopped parsley and mustard on the side if you like.
