Ingredients

  • 2 lb pork shoulder
  • 2 tbsp olive oil
  • 1 medium onion
  • 1 cup chicken broth
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

    Cut the 2 lb pork shoulder into 2-inch chunks and pat dry with paper towels. Season all over with the 1 tsp salt and 0.5 tsp black pepper.

    Heat the 2 tbsp olive oil in a large pot or Dutch oven over medium-high heat. Add the pork in a single layer and sear until browned on all sides, about 6 minutes total. Work in batches if needed to avoid crowding.

    Add the 1 sliced onion and cook, stirring, until softened and golden, about 4 minutes. Pour in the 1 cup chicken broth, scraping up any browned bits from the bottom.

    Reduce heat to low, cover, and simmer until the pork is fork-tender, about 20 minutes. Uncover and simmer 2-3 minutes more if the sauce needs thickening.

    Serve the pork with its sauce spooned over the top.
