Ingredients

  • 1 lb pork belly
  • 8 oz tofu
  • 8 oz noodles
  • 3 stalks green onions
  • 3 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp sugar
  • 1 inch ginger
  • 2 cups water
  • 1 tbsp oil

Instructions

    Cut pork belly into 1-inch cubes and pat dry with paper towels.

    Heat oil in a pot over medium-high heat and brown pork on all sides.

    Add sliced ginger, soy sauces, sugar, and water; bring to a boil.

    Reduce heat, cover, and simmer for 45 minutes until pork is tender.

    Add tofu cubes and simmer for another 10 minutes to absorb flavor.

    Cook noodles according to package instructions and drain well.
