Ingredients

  • 2 lb pork belly
  • 4 stalks scallions
  • 6 cloves garlic
  • ¼ cup soy sauce
  • 2 tbsp dark soy sauce
  • 2 tbsp sugar
  • 1 inch ginger
  • 2 whole star anise
  • 2 cup water
  • 2 tbsp vegetable oil

Instructions

    Cut pork belly into 1-inch cubes and blanch in boiling water for 3 minutes; drain.

    Heat oil in a pot, add sugar, and caramelize until golden brown.

    Add pork belly and stir to coat with caramel; cook until lightly browned.

    Add soy sauces, ginger, star anise, and water; bring to a boil.

    Reduce heat, cover, and simmer for 1 hour until pork is tender.

    Uncover and simmer until sauce thickens, about 15 minutes.

    Garnish with sliced scallions and crispy fried garlic before serving.
